"except for the very end"?
Which bit, the nunchaku section in general, or the sexy pose at the end?
Myself, I'm not too sure about going straight for a vital spot with a knife during the grappling, or even drawing a knife and using it against an unarmed opponent, unless size and strength (& skill) are very disproportionate.
With multiples, though, it would be an option for consideration.
