One example how I might use Gum Sao in a non traditional way. The idea is to have an effect over the entire body instead of just the limb.

Well, it's not my concept of "gum sau" either, but in my group we do use gum sau to stuff the head. Kinda-sorta. Here's the first thing I found on youtube. Side gum sau and sprawl to defend against a double leg (see 0.40 -0.55 below):

Yeah. There are so many flavors of gum sau.

Some people may think that to use palm to press down on opponent's arm is Gum Shou. But to use palm to press down on opponent's forehead, neck, or shoulder is not Gum Shou.

When you use your WC skill in striking, it's WC. But when you use your WC skill in wrestling, it's not WC. This way of thinking can be too restricted.

That is a matter of opinion. How do you limit a concept? Why would you?

If the head/neck are in a location which would support the idea of gum sau...why not use it?

Because you use other things for head and neck not gum sao...why would you change that ?

I haven't changed anything. Not sure what you mean by that? To me, gum is to push or press. If I kick you in the balls and your head/neck lowers downward, then I push your head into the wall or floor...I've just effectively used gum sau.
To each their own I guess.
