Favorite Technique Against a Knife, with a Twist

Many of us practice the non-knife techniques are weapons defenses as well, so here is an opportunity to discuss defenses against a knife that you think do work, are well-designed, and you could/do trust.
1) What is your favorite technique in the Parker curriculum to employ (at least, in a training environment) against a knife that is not written as a knife defense? I realize, your preferred defense may not be a technique in EPAK at all, but for the sake of the exercise, let's confine ourselves to recognized techniques (allowing some flexibility for variations).
2) Why do you like this particular technique(s)?
3) What lessons do you take from it that are useful in the context of defending against a blade?
