My mom always chilled it overnight. I usually manage a couple of hours before I must have some - it won't be fully set in that time, but if it doesn't jiggle when I shake it (before cutting), I'll usually chance it. If you're not sure, just take a spoonful from the middle (not the center, but what would be the middle of a slice), to make sure it won't flow out if you take the springform off. Of course, you'll have to eat that spoonful, so I suggest starting this test earlier, rather than later.I will definitely try that Kahlua cheesecake when Iām done renovating my kitchen this summer.
