This video has nothing to do with noting technique/effectiveness etc. I just like it for a personal reason. I study TWC and Inosanto Kali. So even though it's pure demonstration and flash I think it's cool.

Is there any video of any WC practitioners actually sparring with the knives?

I haven't been able to find any that are decent tbh. They are all very light sparring and even with full safety equipment you can tell they aren't exactly comfortable using them "in anger" and are afraid of hurting the other guy. Plenty of choreographed demonstration videos though. Some are pretty good but clearly choreographed.
