Question regarding sparring clips I've seen...

But I've noticed in alot (all?) of the sparring clips I've come across on youtube, that when blocking/defending nobody seems to use their free hand (in conjunction with their stick) to check their opponents attack. From my admittedly limited experience in the art I've been taught that when defending you are supposed to check your opponents hand with your free hand.

If it's out of fear of being hit (which I can understand), it seems to me defending correctly is a safer play then simply diving out of the way and hoping you get out of range. Also if this is the case it doesn't make sense for the sparring clips I've seen with padded sticks and/or armor where much of the time you see the same "dive out of range" reaction. So my question is simply why is this so common???
