Defang or Decapitate?

I really enjoyed the videoclip on the thread titled "Defang". Ouch! But it brings up an old question. When sparring, do you generally find it easier to hit the hand or the head? And, which would you target in a self-defense situation. I know that my current instructor seems to have no problem hitting both when he spars with me. But, then again, he's my instructor, right? But, when dealing with someone who's not overwhelmingly superior, do you prefer to defang.... or decapitate?
