I learned a few tips about how to can my own food this year. I gained the knowledge too late in the year to take advantage of this year's produce, but I'll be trying again once more next season start.

I was a little disappointed to see that so many methods involve sugar. Chemically, I understand why that is done. I also understand that adding sugar was less of a concern in earlier times, as fewer people led sedentary lifestyles.

I did find this website, while the layout is a bit painful, there are some good tips for canning with less added sweeteners, or even no sweeteners at all.
