"Greatest Muay Thai fighter of all time", not really, and it bothers me when YouTubers do this.
One of the best, for sure, but there's just no reason to embellish videos. I know that's Jesse's hyperbolic style but it's totally unnecessary and takes away from the core message (part of which is that Suphachai Saepong would never call himself the GOAT, he knows better).
Jesse has experienced Muay Thai before, in Thailand, no less:

I'm really enjoying these 'Jesse gets his *** handed to him' videos though. There are those who claim to be undefeated, and then there is Jesse, who is a better teacher than such people could ever be
