Easter egg leftovers

Now that we have extra boiled eggs, I just made an excellent egg salad, using the following:

mashed hard boiled eggs
paprika
garlic salt
black pepper
olive oil-based mayonaise

Serve on whole grain white bread, with a couple of pickle slices.

Apparently, the olive oil-based mayo DOES make for a tastier mixture.
 
Making them with Kewpie mayo is even better ;)

Deviled eggs.
cut the eggs in half and take the yolks out, mash them up and season them to taste, salt, pepper, etc...the kid made some (he's 13) that are DELICIOUS!!! I think he put some curry in it or something...
put a bit back in the eggwhite halves...if you want to do it fancy, you pipe the mix in with a pastry bag.

Too bad it takes so many eggs to make a decent amount...and too bad that I am prone to eat more than what's good for me...

Pastry Bag! Pah! What are ya' Martha Friggin Stewart? Here's what you do:
Take the yolks out, throw them and seasonings into a ziplock bag, zip it shut, mash the hell out of it, cut a corner off and squeeze back into the white halves.
 
Kewpie is a brand of mayo and dressings sold here in Japan. If you haven`t had it before you`ll notice a slight tang to it, after a short while you get used to it and won`t notice it. It`s a faint trace of formeldahyde that makes it so you don`t need to refrigerate it.It`s an aquired taste, but not bad at all.
