We purchased a Peking Duck this past weekend. While my wife was waiting for it to cook she mentioned that I liked to cook so they gave her the duck carcass along with the usual stuff. Well, yesterday I made duck stock out of the carcass and today I combined the stock with the duck leftovers, shitake mushrooms, and poured it over mung beans. Voila, duck soup for dinner. Hmm Hmm good!
