Want to do something a little more interesting with the bubbly left over from New Year's?
I haven't yet tried any of these. Most incorporate bitters which are more popular in classic cocktails of the south and not something I've personally experimented much with.
However, I'm intrigued. And there's a first time for everything, right?

Old Cuban
From Jerry Slater, H. Harper Station, Atlanta, Georgia
1 ½ oz. aged rum (we use Flor de Caña 7 yr.)
¾ oz. lime juice
¾ oz. simple syrup
4-5 fresh mint leaves
2 dashes Angostura bitters
3 oz. champagne
In a shaker, combine all ingredients except champagne. Add ice and shake vigorously. Strain into a champagne flute. Top with champagne and garnish with a fresh mint sprig.
